The Art of Japanese Eating: The Izaka-yaJohn Sugimu-aTokyo’s fast food izaka-yas are lively, tasty, pocket-friendly pubs, where raucous drinking and eating is the game. Izaka-yas started in Tokyo years ago as holes-in-the-wall where office workers could chug beer and sake before they went home to dinner with their families. John will take us on this adventure where together we will prepare a traditional assortment of dishes – seafood salad, hot fried, and noodle dishes – that you would enjoy at an izaka-ya. This course includes lessons on Japanese culinary history and culture, handling and maintaining knives, highlighting the seasons through seafood and vegetables, and basic Japanese sauces and stocks.
