We are seeing bacon enjoy a new respect from food critics and gourmands and being presented with a variety of unexpected ways from bacon lollipops to bacon-flavored vodka! Since everything is better with bacon, we devoted an entire class to this magnificent meat. Methods of creating bacon at home will be discussed, and Chef Jim will create an amazing menu of Potato-crusted Egg Sous Vide with Bacon Crisp and Black Truffle Hollandaise served with Bacon-infused Bloody Mary Apéritif; Bacon Three Ways (Croque Monsieur, frisée salad, with warm bacon vinaigrette); Caramelized Pork Belly with Sweet Potato Puree and Soy Citrus Glaze; and Apple Croustade with Cabot Cloth Bound Cheddar and Fennel, Bacon Ice Cream.
