July 2018. Bayport, MN. The Greater Stillwater Chamber of Commerce welcomed new business Mabel’s Ice Cream Shop with a ribbon cutting celebration on July 12. The event took place at their historic location along the main drag in Bayport. Gregg and Robin Ellingson, owners of Mabel’s Ice Cream Shop, cut the official ribbon with Chamber ambassadors and staff, Mabel’s employees, Bayport City officials and community members, and friends and family in attendance. Guests were quick to gather in the shaded lawn alongside the business to celebrate the brand-new business and to sample ice cream from inside the shop.
Mabel’s Ice Cream started from a family-friendly, community-focused vision by Gregg and Robin, owners. The name Mabel nods to the old-time nostalgia and family-focus of the business, named for owner Robin’s grandmother. Another trinket from this family line is found by the sign in the front of the building; a piece of petrified wood from Mabel’s own collection of traveled artifacts, yet another symbolism of family and the importance of heritage and history that typifies Mabel’s Ice Cream Shop.
Mabel’s Ice Cream Shop is renovated inside to feel like an old-time ice cream parlor in an 1890 Victorian structure. They have captured the essence of simpler times and joyful family outings in their well-designed space. The freezers of multiple flavors welcome you to taste, sample, eat and enjoy true old-fashioned ice cream. Mabel’s also offers craft sodas, kombucha, energy drinks, energy nutrition bars, and more. You will certainly leave Mabel’s with a smile upon your face and a warm heart having visited this fantastic ice cream shop. Owners Gregg and Robin are more than welcoming and fully deserving of every success Bayport will encourage for their new business.
