    May 2018. Stillwater, MN. The Greater Stillwater Chamber of Commerce welcomed new member business, The Pearl & the Thief at their Main Street Stillwater restaurant on May 31. Business owner Joe Pirri, supporters and Chamber Ambassadors attended the event.
     
    Yes, there’s a new thief in town, and they come with robust experience in the hospitality business, high quality food selection, impeccable customer service, craft cocktails, and a bit of a New Orleans, Savannah Georgia flair. Owners Joe Pirri and chef Justin Sutherland (also business partners at the Handsome Hog in St. Paul), along with minority partners Joe Ehlenz and Brad Nordeen of Stillwater’s LOLO bring to Stillwater something like we have never had before.
     
    A high-end southern style whiskey and oyster bar with dishes inspired by chef Justin Sutherland’s grandmother “Big Mama.” Seafood is flown in fresh from clams, to oysters, to crawfish, to shrimp, the menu is truly remarkable. Sip. Suck. Repeat. Is their motto, but don’t forget the sweat tea chicken, NY Strip and the good ole go-to fish n chips. There is something for everything at The Pearl & the Thief.
     
    The décor is amazing, clean and fresh. Several guest were surprised at the intense transformation from the Pub 112 to Cat Balloons, some of the older businesses in this space. It was like walking into a whole new world. Colors of light blue, teal, and green with black and white pictures surrounding the contemporary interior was surprisingly a breath of fresh air for a local restaurant here in Stillwater. Unique and different with chandeliers that looked like jazz horns completed the feel of the south.
     
    “We wanted to step it up and bring something new and unique to Stillwater, with a little southern charm,” said Pirri, and they sure did. “Our goal is to exceed people’s expectations and provide our customers with a new experience,” stated Pirri. The historic town of Stillwater, both locals and tourist, are going to enjoy this new culinary addition to the valley.
