Methods of creating bacon at home will be discussed\, and Chef Jim will create an amazing menu of Potato-crusted Egg Sous Vide with Bacon Crisp and Black Truffle Hollandaise served with Bacon-infused Bloody Mary Ap ritif\; Bacon Three Ways (Croque Monsieur\, fris e salad\, with warm bacon vinaigrette)\; Caramelized Pork Belly with Sweet Potato Puree and Soy Citrus Glaze\; and Apple Croustade with Cabot Cloth Bound Cheddar and Fennel\, Bacon Ice Cream. Each course will be paired with wine.
